Ingredients

• Bourbon / rye60 ml (rye is traditional)
• Angostura bitters3 dashes (Peychaud's if you can)
• Sugar cube (pantry)1
• Absinthe rinse (optional)optional

Method

1. Rinse a chilled rocks glass with absinthe if you have it; discard the excess.
2. Stir whiskey, sugar and bitters with ice in a separate glass.
3. Strain into the rinsed glass, no ice. Express the lemon zest over the top and discard.
