A Tom Collins that went to finishing school.

Ingredients

• Gin50 ml
• Lemons25 ml juice
• Sugar syrup (pantry)15 ml
• Egg white (optional)1, for silk
• Soda watertop up

Method

1. Shake gin, lemon, syrup (and egg white) hard with ice.
2. Strain into a small highball without ice.
3. Top gently with soda — watch the foam rise.
