Gin Fizz
A Tom Collins that went to finishing school.

Ingredients
- Gin50 ml
- Lemons25 ml juice
- Sugar syrup (pantry)15 ml
- Egg white (optional)1, for silk
- Soda watertop up
Method
- Shake gin, lemon, syrup (and egg white) hard with ice.
- Strain into a small highball without ice.
- Top gently with soda — watch the foam rise.
